Recipe | Pasta Al Limone

Spring has sprung and I’m ready to indulge in this season’s best, pasta-style! While embracing the freshness of the season, winter temps are still lingering, giving us craveable combinations of savory and light meals. My current favorite spring meal is Pasta Al Limone, the simplest meal that comes together in minutes, using common pantry staples like pasta, lemons, cheese, butter and cream! I love this pasta dish because the fresh essence of lemon is always present but never overpowering, combined with a creamy, buttery, cheesy sauce – can life be anymore perfect? An ideal day during this time of the year looks like a festive gathering with friends while whipping up some incredible food, then ending the evening with a steamy bath and a hydrated face becauseeee, #selfcare. And yes, that DOES mean I’m snuggled up in bed by 9:30 😉

Pasta Al Limone Recipe by Generation Jen

Pasta Al Limone Recipe 
Prep: 10 minutes
Cook: 15 minutes
Total time: 25 minutes

1lb of your favorite pasta  
1 lemon (zest & juice)
1 cup heavy cream
1 stick salted butter, divided into 2 tbsp pieces 
1 cup freshly grated parmigiano reggiano
1 cup panko breadcrumbs
1 bunch chopped fresh italian parsley 
Freshly ground black pepper
Flakey sea salt 
Edible flowers (optional)


1. Prep your ingredients – finely grate parmesan, chop parsley, zest lemon and then juice, reserving about 2-3tbsp. Set aside all ingredients. 

2. Using a small pan, melt 2 tbsp of butter with a pinch of salt and mix in panko. Toss continuously on medium heat until toasted or darkened, about 3-4 min. Set aside for garnishing.

3. Boil pasta in heavily salted water, 1 min shy of package instructions. Reserve 1 cup of starchy pasta water before adding the pasta to the sauce. 

4. While the pasta is boiling, add lemon zest and heavy cream in a dutch oven or large pot over medium heat, stirring constantly until a light simmer, about 3 min. Reduce heat to medium-low and add in remaining butter 2 tbsp at a time, still constantly stirring until emulsified. Remove from heat.

5. Add reserved pasta water to the sauce and mix. Using tongs or a slotted spoon, add the pasta to the sauce, directly from the pot. Return to medium heat. 

6. Add parmesan in batches, constantly stirring until melted and creamy. Add reserved lemon juice and season with salt and pepper. 

7. Divide into bowls and garnish generously with freshly ground black pepper, italian parsley, toasted panko, a pinch of flaky sea salt and edible flowers (optional). Enjoy!
