Recipe | Pasta Al Limone

Spring has sprung and I’m ready to indulge in this season’s best, pasta-style! While embracing the freshness of the season, winter temps are still lingering, giving us craveable combinations of savory and light meals. My current favorite spring meal is Pasta Al Limone, the simplest meal that comes together in minutes, using common pantry staples like pasta, lemons, cheese, butter and cream! I love this pasta dish because the fresh essence of lemon is always present but never overpowering, combined with a creamy, buttery, cheesy sauce – can life be anymore perfect? An ideal day during this time of the year looks like a festive gathering with friends while whipping up some incredible food, then ending the evening with a steamy bath and a hydrated face becauseeee, #selfcare. And yes, that DOES mean I’m snuggled up in bed by 9:30 😉

I’m SO excited to share what’s put an extra spring in my step this season! We all say self care is a goal during the new year season, but I’m taking it more seriously than ever this year. When I was graciously requested to contribute a spring-themed recipe to my favorite brand, Ode to Self Skincare’s newsletter, Concept of Self, I SCREAMED. Ode to Self creates products with what your skin actually needs. They formulate without the use of artificial fragrance, dyes, excessive ingredients, or high amounts of BHAs and AHAs, allowing a true balance of transparent, hydrating, and restorative ingredients! Ode to Self’s system focuses on the basic steps required in a routine to help you get to know your skin better, creating a solid foundation to build on for your healthy skin journey.

My absolute favorite product EVER is Ode to Self’s De Palma – Hydrating and Clarifying Facial Oil. I initially purchased this product years ago to help fade my acne scars and I can promise, this stuff is liquid gold! It also keeps my face super hydrated and soft all day long! Enjoy 15% off any Ode to Self order $35+ at this link or use code JENNI15 at checkout!

Alright, alright. Food first, skin later. When life hands you lemons… you make Pasta Al Limone! If you try this recipe, I’d love to see it on social! Be sure to tag me @jenaceret and @odetoselfskincare. Mangiamo!

Pasta Al Limone Recipe
Serves
Prep: 10 minutes
Cook: 15 minutes
Total time: 25 minutes

Ingredients
1lb of your favorite pasta
1 lemon (zest & juice)
1 cup heavy cream
1 stick salted butter, divided into 2 tbsp pieces
1 cup freshly grated parmigiano reggiano
1 cup panko breadcrumbs
1 bunch chopped fresh italian parsley
Freshly ground black pepper
Flakey sea salt
Edible flowers (optional)

Directions:

1. Prep your ingredients – finely grate parmesan, chop parsley, zest lemon and then juice, reserving about 2-3tbsp. Set aside all ingredients.

2. Using a small pan, melt 2 tbsp of butter with a pinch of salt and mix in panko. Toss continuously on medium heat until toasted or darkened, about 3-4 min. Set aside for garnishing.

3. Boil pasta in heavily salted water, 1 min shy of package instructions. Reserve 1 cup of starchy pasta water before adding the pasta to the sauce.

4. While the pasta is boiling, add lemon zest and heavy cream in a dutch oven or large pot over medium heat, stirring constantly until a light simmer, about 3 min. Reduce heat to medium-low and add in remaining butter 2 tbsp at a time, still constantly stirring until emulsified. Remove from heat.

5. Add reserved pasta water to the sauce and mix. Using tongs or a slotted spoon, add the pasta to the sauce, directly from the pot. Return to medium heat.

6. Add parmesan in batches, constantly stirring until melted and creamy. Add reserved lemon juice and season with salt and pepper.

7. Divide into bowls and garnish generously with freshly ground black pepper, italian parsley, toasted panko, a pinch of flaky sea salt and edible flowers (optional). Enjoy!
